If you’ve been searching for an easy strawberry cheesecake recipe that skips the fuss of slicing, springform pans, and cracked tops, this scoopable strawberry cheesecake is about to become your new go-to. Think of it as all the creamy, tangy, no-bake cheesecake flavor you love, layered with a buttery pretzel crust in a dish and served with a spoon instead of a knife. Genius, right? No water bath, no worrying about the top splitting in the oven, and no stress about getting a perfectly clean slice for guests. It’s the perfect sweet-and-salty, make-ahead dessert for late summer gatherings or just a weeknight craving — and once you try the spoon-and-dish method, you may never go back to a traditional slice.

The magic of a scoopable cheesecake is all about texture, and the pretzel crust takes it to the next level. A whipped cream cheese filling gets folded until it’s light and fluffy, then layered with sweet strawberry sauce and a crunchy, salty pretzel crumble. Every bite has that perfect balance of creamy, fruity, salty, and crisp — the kind of contrast that keeps you going back for just one more spoonful.

The pretzel crust in particular sets this apart from a classic graham cracker base, adding a salty depth that pairs beautifully with the bright strawberry layers. Because it’s served in an 8″x8″ pan, this easy cheesecake recipe is an great make-ahead dessert for small parties, or late summer barbecues, and it scoops into perfectly portioned servings without any of the usual cheesecake stress.

This recipe is proudly made in partnership with Cabot Creamery Butter. Cabot’s unsalted butter consistently brings the richest flavor and the best texture — which matters a lot in a recipe where butter is the star, not just a supporting ingredient.

  • Use room temperature cream cheese – This is the secret to a smooth, lump-free filling — cold cream cheese will leave you with a lumpy texture no matter how long you whip it.
  • Chill before serving – Give the cheesecake at least 8 hours (overnight is even better) in the fridge so the layers set properly and hold their shape when scooped.
  • Layer strategically – Build in thin, even layers so every scoop gets a bit of crust, filling, and strawberry topping.
  • Make it ahead – This cheesecake actually tastes better the next day, making it an ideal make-ahead dessert for parties or busy weeks.
  • Store it covered – Keep leftovers tightly covered in the fridge to prevent the pretzel crust from softening too much.
How long does scoopable strawberry cheesecake last in the fridge?

Stored covered in the fridge, this cheesecake will stay fresh for up to 4-5 days. Just make sure it’s tightly covered.

Can I make this ahead of time?

Yes! In fact, this cheesecake tastes even better the next day once the flavors have had time to meld and the layers have fully set. It’s an ideal make-ahead dessert.

Can I freeze scoopable cheesecake?

You can freeze it for up to 1 month, though the texture of the strawberries may soften slightly once thawed. Thaw overnight in the fridge before serving.

Can I use frozen strawberries instead of fresh?

Fresh strawberries are recommended for the best flavor, but frozen should still work okay! Thaw them and then drain them before making the strawberry sauce. You will want to avoid excess liquid in your layers!

Do I need any special equipment to make this?

Nope! All you need is an 8″x8″ pan, a mixing bowl, and a hand or stand mixer for the filling — no springform pan or water bath required.
